Cherry, watermelon, and feta salad

I made this while visiting Michigan so had to add some local sweet cherries to a great savory application of summer fruit.

Note: this particular recipe is a note to my future self and has not been thoroughly tested.

Ingredients

  • 1/2

    watermelon, cubed in 1" pieces

  • 1

    pint cherry tomatoes, halved

  • 1/2

    pint sweet cherries, halved and pitted

  • 4

    ounces feta, crumbled

  • 1/2

    cup mint, chopped

  • 2

    tablespoons olive oil

  • 1

    teaspoon red wine vinegar

  • 1/2

    teaspoon Diamond Crystal kosher salt

  • Freshly ground black pepper

Instructions

  1. Make the sauce

    Whisk together olive oil, red wine vinegar, salt and pepper.

  2. Combine

    Mix together the watermelon, tomatoes, cherries, and feta. Toss with dressing right before serving.

Notes

This is best eaten the same day it's made. If it sits for too long the fruit juices will separate from the fruit.
