The only granola recipe you need

This is the same as the Eleven Madison Park granola recipe on NYTCooking but with weight measurements because that’s easier for me to measure. I often substitute the same weight of nuts and seeds with whatever I have on hand.

Ingredients

  • 75

    grams olive oil

  • 120

    grams maple syrup

  • 50

    grams brown sugar

  • 280

    grams rolled oats

  • 125

    grams chopped nuts like pistachios, pecans, or walnuts

  • 95

    grams pepitas

  • 65

    grams unsweetened coconut

  • 120

    grams dried cranberries, cherries, or golden raisins

  • 9

    grams kosher salt

Instructions

  1. Preheat the oven

    Preheat the oven to 300° F.

  2. Melt the sugars

    Combine the olive oil, maple syrup, and brown sugar in a sauce pan over medium-low heat until the brown sugar is dissolved.

  3. Mix

    Combine the sugar mix with the rest of the ingredients (except the dried fruit) in a large bowl.

  4. Bake

    Spread the mix on a large baking tray lined with parchment paper or silpat. Bake at 300° F for 35 to 40 minutes, stirring a few times to allow even browning. Remove from oven and toss in dried fruit. Let cool completely and store in an air tight container at room temperature.
